Australian cuisine can only ever happen when chefs go out and get their hands dirty, and forget the bush tucker slang and white-man attitude – this is cooking as an act of reconciliation. One, Orana launches almost the entire panoply of indigenous ingredients on to one menu, and some of these, such as Geraldton wax, need to be used really carefully. The other is the interface with chefs, who deliver food. Some are more humble than others."
